Hey there,

I've got a basic Virgin TV cable connection in my house (the free channels), if I were to purchase a Eurovox HD box, something like the Starview HD Combo LAN, would I be able to watch the Sky Sports channels in HD?

yes you need a Kryptview or Starview get them from here Lincsats Nick Nacks...
