Default best way to hackit ambit255 and epc2100r2

Hi all, hope you all good new year. noobie to modems so would like some help if possible. I have 3 modems at my disposal, none subbed. I have a epc2100r2 which until 2 or 3 months ago was subbed and hasnt been touched since. an ambit255 which hasnt been used for 4 or 5 years and as far as im aware hasnt been flashed, but not sure and finally an old ntl home:120 which is so old i cant remember where it came from but hasnt been touched.
What I would like to know is this:- what is the best/latest working firmware that i need to flash these with, which ones are worth using and which binning (im guessung the 120 is a binner) and any workarounds for problems that seem to be springing up at the mo.
I have heard that if you have an unmodded modem it is best not to flash it but to just put a working mac in it so it can be updated by vm. is this correct, if so what do i need to do after that? im in the swindon ex ntl area if its relevant.
I can find guides on how to do everything, just need to know what things i need to do!
Any help would be much appreciated and sorry for the lengthy post.
