Dose this exist???

Is there such a thing as a digital recorder that can have a sky box or freeview box plugged into it to record, like a VCR but with a hard drive. I don't want it to have a built in tuner. dose such a thing exist and how hard are they to operate, needed for an elderly lady.

Usually you just have to set the DVD recorder, or even an old VCR, to AV and then record as normal, you can even set the timer.

yes plenty of dvd recorders with hard drives built in will do the job no problem

Yep, I have a Sony one at home, don't tend to use it for recording any more, as its old technology, with far better picture quality available going straight from digital to digital, rather than digital-analogue-digital again.
