Default 720p

Is it possible to record at 720p with the Canon HV20?

Yes, capture at 1080i (the only option avail)
Then convert to 720p.

But why would you want to?

As far as I know there's no such option. 720p is quite different. It depends what you want to achieve.

Sometimes 720p can look better (depending on scene and speed moving objects) but I think for most situations 1080i works well.

p=progressive scan

i=interlaced.

Basically progresive scan is non-interlaced.

With interlaced alternate lines are scanned every frame, the gaps are filled in on the next frame.
