Default DECLINATION ANGLE

Hello,
Having just got my 2100A motor i am building up courage to spend another weekend up the ladder(neighbours think i'm mad). Could you please give me a little explanation on declination angle.
At present i have a Technomate 1500c1+ 800dish & a monoblock lnb. My location is 53deg 30min & my fixed dish elevation angle is just under 27deg & i pick astra 19deg & Hotbird no problems.
In the manual for the new motor there is a table which gives an elevation angle of 36.5 deg for my lattitude of 53.30 ( presume this is the motor elevation angle) & a declination angle of around 7.5. Do i knock the 7.5 from the 36.5 & set the dish angle at 29deg or have i got it wrong?
Finally how do you get true south using a compass which shows magnetic south.

I could run you through it here, but our motor install FAQ covers it all.

The Motecks are easy because they have a latitude scale on the motor mounting bracket, so all you have to do is set that to your real latitude, and then set the declination on the dish itself - which the FAQ will walk you through
