After you set your motor to 0 and locate the satellite nearest to your due south position you then use minor adjustments to get the best signal.
Try sending your dish to 16E and then using the receiver options to tweak the motor, to get the strongest signal, save these settings, then if you need to, you make minor adjustments to the dish to get the strongest signal then check the arc again.
It is a case of making minor alterations until you get the best out of your dish.
Also check the skew of the LNB.
